As for the sage taste in western game, I don't know what that is. I have eaten Wyoming antelope and mule deer. Both were excellent table fare.

A couple days in a cooler of ice water bleeds the sage taste right out. [up]

Not sure if it counts, but years ago, I was at a fancy restaurant with my wife's family for something and they had hard-boiled quail's eggs. I thought, "an egg's an egg, right?" Wrong! Most foul tasting thing I ever ate.

Gut shot doe I didn't find until the next day. Tried to salvage it and not waste the meat but I had to throw the whole deer away after I butchered it. Learned years ago that the only way I like goose is smoked. Had cougar stew years ago, not bad, but not good. Had grizzy bear and will never try it again. Killed one black bear and will not harvest another one. Moose and elk are right behind deer with elk maybe ahead. Never had raccoon or beaver but have eaten my share of muskrats.

Caribou, I had it at bear camp in NB a few years ago and it was terrible. Could have been how it was cooked but after that ill never eat it again. Also the first bear I killed 10 years ago was bad but I've killed a bunch more every year after and they have been pretty good.
