I decided to have Jorge butcher my bear because I honestly didn't want to be bothered and I live near his shop. I never met him until I arrived at his shop. It is pristine and he even proudly posted a certificate from the Board of health on the wall. I found him to be polite, professional, & most importantly did an outstanding job. When I picked up my meat, he asked if I minded taking the bones and scraps. Once again, he politely asked and did not insist on it. I had no problem taking them. I simply put it in with my garbage. Jorge explained that it kept his costs down by sending customers home with their bones and scraps, as well as saved him time. I will definitely use him again. He is a gentleman and one heck of a good butcher.
 
Did he double dip you on the bear ? 150 to skin it. Then don't you think he should have weighed it with out hide and head to charge 1 a pound to butcher Hey I just going from my interaction with him n
Give it a rest already. If your not happy with him go to someone else. Seems as though there are a lot of satisfied hunters using Jorge. Why are you pissing on his parade. Just go to another butcher and stop bitching.
 
I picked up my bear from him yesterday. He weighed the bear when I got there and he weighed it again after it was skinned. He did charge $150 to skin it for a rug but I think thats in line with what others charge. I believe Tom the Butcher's flier advertises the same skinning fee. I am not an expert but I imagine the skinning process is different (simpler) when the hide is being discarded. I also think he had a taxidermist come in to skin my bear.

I got the box of bones also. Caught me by surprise but I didn't really care. I simply threw it out. The cuts of meat looked great.
