Whatever it is, I would bread it in Panko and fry it in garlic and olive oil on a roll with Franks Hot Sauce and mayo!

Definitely a grunt. Definitely not any snapper. Grunt for sure. They make good bait, we used to cut the top of their back off and send them swimming, they would stay alive for about ten minutes leaving a big ole blood trail behind them. Killer for Barracuda, ok for grouper, and ok for tarpon

 

Yep a grunt for sure not a snaper doen't have the coloring of a mutton. Face is to broad as well to be a snapper as well I see.
