Depending where you are...in Manahawkin there is Bruno's. He is awesome and I use him. He will do any cut you want and his sausage is great. You do have to skin the deer first and let him know in advance you are going to use him. He charges a decent price and usually will have your cuts the next day.
 
I use "Ed the deer butcher" on Rt. 9 across from Home Depot in Lacey. He works out of his house. Last year he charged $80 but I'm not sure for this year. They don't need to be skinned. There is also the German butcher on Lacey road that will do it although I have never used them for this.
 
Diane is awesome. It's like $65 or $75 for basic cut. They do sausage and smoked summer sausage. Her number is 609-618-3092 She's located in Warren Grove down the street from Lucille's
