What do you use? Do you ever have them prof. done? Who do you use? What should I buy?

I like my knives sharp...my chef mate manual sharpener just doesnt get the job done once they get dull, it's great for touching up an already sharp knife.

Stones? I either have poor technique or not enough patience..or both....

Help...how do I get my edge back?
 
Depends on the knife, blade angle, and temper of the steel. I use different files, stones, and ceramic rods for different knives. I have MANY knives and carry at least 4 while hunting. I would research each knife or type individually. Good luck GVS and Happy New Year.

I have over 35 years of professional metal working experiance, dabled in knife making, and still keep in touch with several professional knifemakers.

I would sugest that you purchase the KME sharpening system and follow the directions that they include in the package I have had several differant sharpening systems and I am also very capable of putting a shaving sharp edge on any knife freehand with an oil stone but the KME does such a GREAT job FAST and on ANY knife I just don't bother with any of that other stuff any more with the occasional exception of using an "Accusharp on a few of the "Hack Knives we have laying around and on the ones we use to pick assparagus our fine cooking knives and all of my hunting and daily carry knives get the KME treatment.

OBTW the KME is what the very fine GATCO and Lansky systems want to be when they grow up IMO and for not too much more $$.
 
I have/use,a grinder if ever needed, double sided carborundum stone, then a arkansas stone. For touch up I use either a plain steel or a diamond. However I was on a party boat and they had a cool looking sharpener I want to get just for the halibit.;)

Nope I have never had the diamond system in either brand never thought I needed it.
Unless you are going to regularly change the beval angle on blades made from very abrasion resistand materials like A2 tool steel or Vascaloy (I highly doubt this)go with one of the kits mentioner (KME GATCO and Lansky)the Aluminum oxide , Silicon Carbide and fine Arkansas stones provided will do a GREAT job.
As I said my current favorit is the KME but it does have one weak point and that is it does not come with a triangluar stone and you need one of those if you will be sharpening serated blades often as a flat stone won't do the job.
Personnaly I don't care for serated blades and the one I have on my Leatherman Wave is all I need for the few times I'm cutting large rope or shaping Polyurathane foam for hunting and kitchen work I feel they just collect more dirt and fat. The GATCO system comes with a tristone and perhaps the Lansky does to.
Once again your blades are probably 440C, ATS34, 154CM, AUS8,BG42 or S30V theas tool steels bearing steels and powder metal composition blade steels all sharpen up nice with the standard stones provided in the kits mentioned.

Very true and in the interest of truth the statement I made about serated blades collecting dirt and fat can and does seem to aplly to me too so obviously I am not totaly against them :)
