I saw this recipe on FB, except it called for beef, but I forgot it at work today, so I kind of just winged it. Mixed Venison and Bear Chop Meat with salt, pepper, bread crumbs, eggs, onion, garlic, basil & italian seasoning and put a piece of mozzarella cheese in the middle of each meatball, although I could probably have used larger pieces of the cheese. Fried the meatballs until golden brown, then simmered in homemade sauce (gravy) for about 45 minutes. Put on rolls with more mozzarella cheese and sauce (gravy) and put under the broiler for a few minutes. Not quick, but very easy . . .

meat blows venison away.
.[up].Yup,a man that know's. unlike deer you can leave a little fat on the meat, this comes in handy as you have to cook bear like pork,to avoid trichinosis and with the fat it doesn't dry out,and ms grit's idea is neato.[tasty]
