I made venison quesadilla bean nacho dip for dinner (and snack).

Tastes really good with cold Bud Light.

Not that I'm a big drinker or anything.... I just had a long frustrating day... mostly because I was not in the woods.

Yeah... whatever wojot... Mr. I Only Drink Thick Black beer.

I made a venison backstrap this weekend for a bunch of people from NYC. I marinade in red wine, soy sauce, teriyaki, and garlic. I then wrapped it in bacon and cooked it via indirect heat on the grill. The last ten minutes I cooked it on direct heat to crisp the bacon. It was cooked a perfect med-rare. Everyone loved it and said it was better then the beef tenderloin I cooked.

WWP Bowhunter - I too recently cooked a pair of backstrips for myself and my wife... medium rare...just a litte line of pink. She loved it! And she said it was better than any beef she ever had!

[smirk]

P.S. - My wife just doesn't like seeing the deer hanging in the yard (too long).

jerseyhunter - I'll have to try the brn sugar or honey next time. Yummy!

I think the secret is to cook venison to the temp you like your beef. So if you like med steak than cook your venison med. Too many people way over cook game and then blame the game for tasting poor.
