I lived in SD and worked as a guide. There certainly are plently of wild pheasant, as well as sharptail grouse, praire chicken, and grey partridge (which the magazines call huns or hungarians). And there are some legitimate guides as well. But the operations that hunt groups of 10 or so hunters twice a week; are stocking birds, even if they advertise 20,000 acres and that all birds are wild. It is actually easy to freelance in SD. There is plenty of public hunting land - which are off limits to commercial guides FWI. After 2 or 3 weeks after opening day you will rarely be turned down if you ask permission to hunt. Just dont act like a bennie...
