Hot italian..2 tsp salt,1 tsp black pepper,4 tsp fennel seeds,3 tbsp oregano,1 tsp garlic powder,1 tsp cayenne pepper,1tsp fine red pepper flakes,6lbs venison cubed,4lbs pork butt,2lbs cheap bacon(the more fat the better)...Coarse grind all the meat once, mix well and add the seasonings, than fine grind the meat..either make into patties or stuff into 32-35mm hog casings..if you stuff the sausage than on your 2nd grinding do a coarse grind instead of a fine grind
