I have a question on how long it takes to smoke summer sausage. In Rytek Kutas book it doesnt give the total cooking time.

I followed his instructions, and have my smoker set 165 degrees. The sausage seems to be holding at 141 for some time, I tried two different thermometers. I don't want to raise the smoker temp over 170 degrees being afraid to render out the fat. Does it really take this long?

My smoker is an electric one the red one that looks like R2D2. I have a controller to maintain a constant temp.
Any help or anwers are appreciated.
