Hi everyone, I was wondering if anyone had some recipies that have gotten good results. I made a chili last year and it came out ok, but everyone in my family was grossed out by the fact it was squirrel. I'm hoping to get at least someone else in my family to try it this year, maybe make jerkey out of it, or something. Any reccomendations?

I've had it sort of like chicken scapiello.

Oven roasted quartered pieces. A simple white wine olive oil baste.

You can really do some justice to squirrel and rabbit with italian chicken recipes.

An easy method would be to roast it after thoroughly coating it in italian salad dressing (1 pack of Good Seasons, oil and red wine vinegar). Just keep basting it or spooning the juice over the pieces.

Brown both sides but keep it moist.

Brunswick stew is the way to go. Make sure it is nice and spicy. I like brunswick stew that is the only way I have had tree rat.[up]
