After reading GVS's thread about finding the mushrooms, I have to plead ignorence and ask the obvious question...What's the big deal with morels? I've never head of them. Educate me please.

The taste of the morel makes it the most sought after funghi following only the truffle.

I dont sell them although they are very very expensive. Partly because they have never been succesfully cultivated, any morels you see in supermarkets or sold online were found out in the wild.

They are awesome and can only be found a couple of weeks in the spring.

How do you identify them from the bad stuff? I would love to go for M'shrooms, morels and fungi. let alone ginseng.

google morel mushroom hunting, there are really no other mushroom that looks like a morel. There are false morels that are toxic but they are solid, morels are hollow, youcut them lenthwise when you cook them.

To preserve you can freeze or dry, I've done both. Dried are fine for sauces and cooking in dishes, frozen can be thawed and fried in buter, my favorite way to eat them.
