    Better yet - if I have it in the fridge for 3 days, will the freezer kill it?

    No, if it's fresh and not frozen yet, you can still freeze. Do the smell test as 3 days can be pushing it depending on the temp of your fridge, but you should be ok. I'd re-wrap in new plastic or shrink wrap if possible.

    Meant to add-rinse it off in cold water and pat it dry with a paper towel before freezing.

    If it was just killed and fresh it should last more than 3 days. After all you can hang it for a week with no problem. I usually hang my deer for whatever period of time I find necessary. Butcher on one day, wrap and grind the next. I would bet you could go a week with no problems as long as its covered.

    Sitting in cold fridge - I need to get some meat to the grinder for sausage ASAP. The other stuff will get frozen.

    You should still be good to go for a couple days. Either that or freeze it in 5lb packs and thaw and grind as you need it, Afterwards you can still re freeze it. Thaats the way the butchers and sausage makers do it. The buy by bulk when it's cheap than use as needed. Then you buy it at the store and take it home and freeze it. I freeze packages for the summer all the time. This way when you defrost and add the fat for burgers it's fresh. Then I make patties and re freeze. Good Luck.

    i agree. i've had them in there for 7 days. you'll get a little dry loss, that long. but the meats a little more tender.
    i got the warning tonight, get that boned out deer out of MY fridge, thanksgiving is coming.
