I second using the scraps for furbearers, crows, or just making a "carcass cam" with your trail cam.

After looking around online, seemed like Jorge was a good way to go based upon price and variety offered, so I called him. This was about a month ago, he was nice on the phone and told me to come back in January because he was so busy. That was fine by me, because the sausages can wait.

But after reading this, now I'm thinking of going elsewhere. Anyone have any recommendations of a good place to have sausages made? Thanks, first time doing this so I appreciate the feedback!
take it to Jorge. His sausage is great

A butcher giving you back your deer scraps is like a plumber snaking your drain and giving you a bag of sh@t back.

Mitchell's in Hawthorne, which is an absolutely disgusting shop located on a residential street, in a ramshackle garage does the same thing. Box of scraps with cigarette ash in it. Went once years ago and never went back, obviously....

Guys like this just make you appreciate guys like Jimmy from the Hunterdon Deer Butcher. An immaculate shop, with more refrigeration than you can imagine and a super nice guy and nice, clean meat back.
