not much to it realy .I bought a book w/ a ton of sausage recipes in it so I can make my own mix from now one the book has about 300 mixs in it .check it out if you to make some home made mix it is called the venison sausage cookbook

I use the sausage maker but Hi Mountain Summer Sausage from Cabella's is esp fried in the AM with eggs.

You can always ask your butcher to sell some casings but your on your own for the spices.

You don't really need a kit. Just a grinder with sausage horn attachment and some casings. I've used the supermarket casings, but far superior are the ones from here.

I use the 29/32 mm hog casings dry salt pack tubed. They come as about 10 pieces of casing wrapped around a plastic tube. You place the tube over the horn to load it, and the casing is long enough to hold about 10lbs of filling in one continuous piece, which you then twist into links.

This book is pretty good, but you can get the same info for free on the internet.

I use and strongly recommend the #10 ChopRite manual grinder, which you can get cheap on ebay. I get lots of compliments from visitors who see it clamped onto my kitchen counter.

Sausage making is easy and a lot of fun, and you'll never go back to supermarket sausages.

P.S.- Even though this sounds like an infomercial, I have no ties to any of the above companies. Just a very satisfied user. It's nice to see that some things are still made to high standards in the USA.

Clarification:
Each tube holds about 10lbs, so the whole package can handle about 100lbs of meat.

Also, check out the old choprite sausage stuffers. One of my friends has one. If you like old Americana, it's a great conversation piece.

I have seen them in the hunting section of Wal-mart. Not sure how good they are though.
