Yes,I would say you get 40-45% .Before the deer is dressed out.Just ask my garbage man who takes away the leftover carcass !!!!

As far as I know there is no license or board of health inspection required. The only laws/ordinances he is probably breaking is with the IRS and maybe operating a bussiness in a resident thats not zoned for bussiness.

Any business must have a state ID #. The butcher business falls in the food cateroy & they MUST be inspected by the health dept. So to be legal they must have a cooler to store meat. Beside zoneing stops the garage butcher. Butchers fall in 2 caterories in NJ, Farm or commerical. I sure as hell don't the the guy next to me having deer bodies & scraps around waiting for garbage day once a week. LOL
Working under the table is fine with me but I not paying for someone to mistreat my FOOD.

He may have to register as a bussiness to get a tax id number but if he ONLY butchers deer/wild game it's not under any regulations as far as video tapes and statements I have heard. The only reason he must register is to charge sales tax for his services. Maybe Killer's kitchen or one of the other proffesionals could chime in and set me straight. Providing they only butcher game meat and not animals regulated by the FDA.

The inspection by the health department for a wild ganme butcher falls under local jurisdiction, not state, how ever if you take DONATIONS, such as hunters helping the hungry, you must be state inspected. As for tax I.D, you just need a social security number and file a 1099 form,self employed. As for zoning for business, that also goes town to town. In my town every home owner can get approved for 1 personal business with 1 building in a an R-22 zone. As for the cooler, a personal services butcher, non- commercial, is not required to have one, but I wouldn't use the services of some one who cannot keep meat at a constant temp of 35 or lower.

Here in Washington township Morris county The Health dept checks my buddy before the season & does spot checks during the season. He had to build a cooler to hang the deer. He also had to have a seperate sink/dishwasher for his equipment on site. Couldn't use the the household washer. He also has to keep records of the tag # to customer for F&G. During deer season he can't cut pigs or beef if there's a deer in the building

Nope and I'm willing to bet that the reason I only got back 26 pounds is whatever spoiled is in the garbage. From the PM's I got this isn't the first time someone has had a deer there over a week and got chumped on the meat besides.

This guy cut my last 4 deer without a problem.So who knows? The only deer that was light coming back had two busted up shoulders from my shot and a load of shot from another guy.
I got one deer back the same day.
He always turns over alot of deer. Something must have happened.
