I have butchered my own in the past but would like to learn more. I'd like to get better. mpemt24- I skin/quarter at Janek's. He's not ready just yet with other aspects of the buisness going on now, but he'll be ready on Oct. 1. The thing with his shop is that he really isn't exceptionally busy until the gun (N.J., N.Y. & Pa.)seasons. I just spoke to Jim and told him about the post and he said to give him a call.
