For all you guys who turkey hunt. I skin deer at Janek's and we all (all of the other guys who turkey hunt and work at the shop) have Jimmy smoke the bird. There is a live poultry shop just up the block. Give em' $10.00 and he'll pluck your bird. Then bring it back to Jimmy, and in a few days pick up your bird. If you've never had a smoked bird, It's the only way to go.

For some reason the drumsticks and thighs come out tasting like ham.

The passaic butchers union has many years experience working there and Jimmy does a wonderful job at keeping his help and treating them right. My deer always come out great and the guys are fun to hang with when they work. Just stay out of their way and watch the knives! They hunt and are all excellent skinners and deboners. Jimmy does all the finial cuts on the meat for the coustomers and Rose wraps all the meat as Jimmy cuts it. That is how he knows you get your deer all the time! Organization in the shop is a piority!
