My wife is border line bunny hugger and she always appreciates coming home to fresh meat hanging in the garage. Or better yet a whole weeks worth of 6 day firearm deer from all the guys. Friggon priceless!! She bitches so much about it I have been taking them to the butcher. Hey Its her 65 dollars too. What the hell!

I posted this info on another Forum awhile back...figured some her might enjoy it...(I apologize if any portions are if  out of context...)

1). Immediately field dress, then hang for 3-5 days depending on the temperature. (Ideally temps range from 33-45 degrees. Outside those temps I skip straight to method two.)

With this method there is no possibiliity of waste from the internal cavity touching the meat, and the hide is always protecting the side not being cut. Once the first side is complete, simply work from the interior of the second side relying on the hide to protect the meat from dirt or other contamination. Place all cut meat on the excess hide as it is being removed.

This process will result in 2 large hams, two backstraps, two tenderloins, two shoulders, and any other "scrap" meat that is desirable from the ribs neck etc.

This meat is then carried in a pack to a refrigeration unit where it is stored from 3-5 days. After the ageing is complete I will use a set of very sharp knives to remove a thin layer of meat,( and any remaining hair) from any areas that may have been exposed to air, resulting in a clean fresh cut.

Finally, I cut and package all portions into readily usable pieces.

(Obviously this is a brief synopsis, however I would be happy to go into specifics about any parts that were not clearly presented.)

Here is an example of an aged ham ready for final processing, (Yes,...this was quartered in the field 5 days earlier, then refrigerated at approximately 35 degrees)....

The final product being prepared...the venison is the smaller serving in the black pepper/dried cherry sauce, alongside the venison are large cuts of standing rib roast.

Dave any way you could upload it to like utube or something ? File must be to big since no one is getting it that you send it to .
